Our Philosophy

We believe coffee should be as simple or complex as you want it to be.

From the origin topography, to the water quality used in the end pour and everything in between, we obsess on every possible variable. Our ambition is to serve great tasting coffee from the best beans we can source each season from around the world after careful consideration.

 
  • The right beans- with over 800 tasting notes and potential flavours in coffee, there are many places that we can source our coffee from, The coffee that is served to you is chosen after careful consideration We use a blend of coffee beans (coffee from all over the world in one drink) and specific single origins (from one coffee producer, region, particular country) for our coffees.

  • Differing roast levels will have a great impact on tasting notes you’ll be able to discover in your coffee. Our coffee has been roasted for specific brewing equipment {Cezve, Espresso, Syphon etc)

  • coffee does not keep fresh forever, so fresh is always best. We only serve coffee at peak freshness for maximum enjoyment, so you wil never get a flat cup.

  • We use filtered water for our coffee, the fewer the minerals in coffee the better quality of water.

  • We measure the temperature of our water, as it will determine the coffee flavour. Pour at a lower temperature (185 degrees) and you’ll extract fewer of the bean’s nascent flavor notes and end with a more bitter taste; pour at a higher temperature (205 degrees), and you’ll discover a coffee that’s extracted more from the bean.

  • Not all grinds are the same, there is no size fits all grind size for making a great cup of coffee. We use the EK43T for our Turkish coffee beans and 2 Victoria Arduino for our Espresso coffee beans, we use a COMPAK PK100 LAB for our Filter brews, Our beans are ground moments before we prepare your cup, so you can be sure that you will get the freshest cup possible.

  • For our Ottoman Coffee Brew, we use 7 grams of very finely ground, lightly roasted, African originated Arabica beans, which is given a second roast to the ground coffee in the Ibrik. A perfect cup suitable for a Sultan. Our Espresso blend Coffee is a blend of three South American beans, a high altitude organic, fair-trade 100% Arabica bean, creating a delightfully smooth, full bodied, and chocolaty cup to enjoy as an espresso, with water or with milk. We always host a second single origin Espresso coffee from differing regions of the World. (Learn more below)

    For our Single origin coffees, We carefully select the beans and they will be roasted to its optimal flavour profile, representative of its origin. which are available via our filtered brewing methods – Siphon, Chemex, V60 and Kyoto Drip and Guest roast Espresso.This is merely a general sense of tasting notes, not a exact of what you will get.
