Most coffee farms in Mexico are small and ran by indigenous groups. They also are organized and they cooperate to specialise in organic coffee. Small producers have started to grow in higher altitudes in recent years to create higher quality coffee. The coffee notes are a light-medium body with a delicate fruit and spice overtones, its mild acidity and balanced flavours create a great cup of coffee.
